This is a pretty simple question in GvD unless I decide to complicate the cosmology.
The primeval giants and dragons emerged fully formed from the elemental chaos that predated the world. Aion, known as The Sculptor who formed the earth from the chaos, was impressed with their form and power and sought to create his own beings. Plants, animals, and all lesser races are his handiwork.
Aion does not take much of an interest in the mortal realm, feeling his creations fell far short of the forebearers' majesty. Druids are stewards of the land and beasts while clerics shepherd the people. Both provide healing, management, and advice. Most people do not make religion a part of their daily lives, mainly seeking out priests when they need something. Priests, for their part, have few required devotions and spend their time in service to others or, if they feel so inclined, to delving into dank holes in the earth to kill monsters and take their stuff.
There is a debate whether monsters and foul creatures are of Aion's hands directly, or if another being warped them, or if another Sculptor created them. Those who believe Aion made them either think they are meant to test the races or that Aion is an uncaring jerk who created literal monsters.
